PME Glycerine is a versatile baking essential, perfect for improving texture and extending freshness in a wide range of sweet creations.
Primarily used to prevent royal icing from setting too hard, glycerine helps maintain a smooth, workable finish on decorated cakes and bakes. It’s also ideal for cake recipes, where it helps retain moisture and keep cakes softer for longer. In candy making, glycerine works to reduce sugar crystallisation, giving you better control and a smoother final result.
How to use:
- Royal icing: To avoid an overly firm set, add 1 teaspoon of glycerine per 500g of icing once stiff peaks have formed.
- Cakes: Add 1 teaspoon of glycerine per 100g of flour to help lock in moisture.
Supplied in a secure, twist-cap bottle containing 35g (1¼ oz) of glycerine.

Storage: Store in a cool, dry place.
